All Vintara wines come from low yielding (less then 1.5 tonnes per acre) bush vines on the Vintara vineyard located approximately 12 kms east of Rutherglen just south of the Murray Valley Highway.
Due to the low yields only a few hundred cases of each wine will be made each year
Vintara wines are not pumped until they are separated from skins. The grapes are machine picked into specially designed and built forkliftable bins that are also used for fermentation. These bins have doors, which allow the grapes to be directly fed into a crusher destemmer that sits above the fermenter.
All Vintara reds are hand plunged twice a day during fermentation. Once fermentation is complete the fermenters are then lifted above the airbag press and fed directly in. Wines then go directly to barrel where they mature until bottling.
The pressings from each wine is matured separately from the free run and blended prior to bottling. The aim is to have wines of generous flavour but low harshness and coarseness. The wines are to be elegant.
Vintara wines have no added tannins or oak chips. They are matured for one to one and a half years in 1 to 3 year old French and American hogsheads.
All Vintara wines are cold stabilized and earth filtered prior to bottling.
The Vintara name is derived from Tara – being a mystical hill in Ireland that was for centuries the great meeting place of Kings. From Tara you can see much of Ireland. Michael's great grandfather named his property Tara on settling in Rutherglen some 150 years ago. Michael and Lisa then called their vineyard Vintara for it’s spectacular views.

The Vintara vineyard also has Viogner, Grenache, Mouvedre (Mataro), Cinsault (Blue Imperial), Petit Verdot, Dolcetto and a few others - these wines have either not come up to expectations or are not in the style we are looking for so will not be released from the 2005 vintage - look out for some great wine from these varieties from the 06 or 07 Vintara vintages.
